If you have Celiac Disease or another Autoimmune Disorder you may find yourself with super low energy some days or you may have been diagnosed with an iron or B12 deficiency.  Without getting too scientific - there’s a direct relation to poor iron and B12 absorption and Autoimmune Disorders.  I don’t know about you, but taking iron supplements is one of my least favourite things to do… it’s really difficult to find one that cooperates with my body (go look up side effects of iron supplements - that is all) and they rarely make a difference....

When it comes to a tiny treat for our little ones it’s important for the food to be full of nutrients for their growing bodies and minds.  I haven’t been too impressed with the options for toddlers when I walk around the local grocery stores.  One of my favourites has been the FreeYumm brand cookies because they are soft and lower in sugars and preservatives.  But I wanted to create something with more of the good omegas, proteins and fibres.

I bake my crust because I prefer it crispy.  However, you can make this without baking if you prefer and your crust will be a little softer...

So…. I tricked my husband.  I made his favourite – Lasagna.  Buuuuuuut, I had a bunch of healthy red lentils in the cupboard and thought, “you know?  Let’s make this lasagna meatless”.  He caught on after the first few bites but it was just as delicious without ground beef.

Lentils have such a high nutrition factor.  They have great levels of iron and folate (who needs beef anyway), and many other vitamins and minerals.

Creating snacks for little ones that are healthy and delicious is really important to me.  I have had many successful creations and many that missed the mark… and ended up thrown on the floor.  But, to be honest, their little palates change frequently and it’s important to be offering different flavours and textures regularly.  Even if they don’t eat something today, keep offering it and they generally come around.  I find my little guy usually needs 3 introductions before he devours it.  At first, they will poke and prod and maybe give it a few...

Socca Green Veggie Pizza

Makes 1-2 pizza’s

  • 1 recipe of Socca

  • 6 tbsp Pizza Sauce (We like to use plain tomato paste!)

  • 4 tbsp Pesto Sauce (optional)

  • 1 cup Kale Coarsely Chopped

  • ¾ cup Onion Sliced

  • ½ cup Asparagus Cut in 1-inch Pieces

  • 2 Portobello Mushrooms; Stemmed, Cut in Half, and Sliced

  • 1 tbsp Olive Oil or Avocado Oil

  • Salt

  • Pepper

  • Non-Vegan Alert!  If desired, ½ cup of shredded part-skim Mozz...
